Chai Latte Popsicles with Surprising Health Benefits

Popsicles are usually loaded with crazy artificial sweeteners and more sugar than you should eat in a day in one small serving. BUT who doesn't love a good popsicle. They are refreshing and as we get into the hotter months, critical for survival in my opinion. I have teamed up with FourSigmatic, a company I love, to create some healthy recipes with their mushroom blends. Sounds scary, but they are really good and have a myriad of health benefits.

Their new Chia Latte blend features turkey tail mushrooms which boost the immune system along with reishi mushrooms which has an immune boosting property along with helping regulate the sleep cycle. I first had reishi at Erewhon in their famous reishi cappuccino. As I sipped this drink I realized I was sitting next to Jermey Piven who I then proceeded to have a long conversation with about my true passion for dolphin training... a story for another time!

Chai Latte Popsicles

Makes 8 popsicles

Ingredients

1 can light coconut milk

1 tsp of honey

Pinch of salt

1/2 tsp vanilla

1 packet of Chai Latte Mushroom Mix

Instructions

In a bowl combine coconut milk, honey, salt and vanilla and mix until all ingredients are combined. Pour into a measuring cup and store in the fridge.

In a large mug, combine 8 ounces of boiling water with one packet of Chia Latte Mushroom Mix and stir to combine. Let it cool, pour into a measuring cup and store in the fridge.

Get out your popsicle molds and place the sticks into the molds, you may have to leave the lid off your popsicle stick. You want to be able to pour small amounts of liquids into your molds and freeze them. When you have your sticks in place pour about 1.5 ounces of the Chai mix into all popsicle molds, place in freezer for 45 minutes. Next pour 1.5 ounces of the coconut mixture into your popsicle molds and freeze for 45 minutes. Continue to do this until you have 4 layers in your popsicles; 2 chai and 2 coconut.

When ready, remove the popsicles from the freezer and let them sit for 10-15 minutes. They should be easy to remove from the popsicle molds. Enjoy!
