Tofu Waffles

In my constant search for higher protein breakfast options, I came across a delightful little recipe for tofu waffles. I know it sounds absolutely gross, but these were some of the tastiest waffles I have made to date. The tofu provided a thick texture that was slightly fluffy and chewy when cooked and a 12 ounce package of tofu contains about 27 grams of protein. I modified the recipe I found to omit sugar and instead used a banana for some sweetness.

Recipe

  • 1 package of organic tofu, firm (12 ounces)

  • 1 banana

  • 1/4 cup coconut oil

  • 1 tsp lemon juice

  • 1/2 cup water

  • 1 cup whole wheat flour

  • 1 tsp baking soda

  • 1/2 tsp salt

Instructions

Combine tofu, banana, lemon juice, coconut oil and water in a blender and blend until smooth. In a separate bowl combine flour, salt and baking soda. Add blended mixture to dry mixture in the bowl and mix until combined. Spoon about 2-3 tablespoons of mixture onto a hot waffle iron. Cook until waffle iron light signals its complete.

You can added coconut whip cream, strawberries, blueberries or top with almond butter and some honey. These are both 2 delicious ways to enjoy.
