Paleo Pumpkin Banana Muffins

I have taken an oath to avoid added sugar, especially as I learn more and more about digestive health and the negative role it plays within the gut. Here is the problem, I have a massive sweet tooth so I need ways to satisfy the urges for baked goods and not slide down the slippery slopes of sugar.

I found an amazing recipe that had almost all the ingredients I was looking for, but it called for 1 cup of sugar, 1 tbsp agave and honey. Not here, not today sir! So I modified the crap out of a recipe and it came out better than I would have thought. I am so excited to share it with you!

Ingredients

  • 2 eggs

  • 1/4 cup coconut oil

  • 2 mashed bananas

  • 1 can pumpkin puree

  • 1 cup oat flour

  • 1 cup corn meal

  • 1/2 cup almond flour

  • 2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp of salt

  • 1 Tbs. pumpkin pie spice

  • 1/3 cup raisins

Recipe

Preheat oven to 350ΒΊ F.

Combine the eggs, oil, banana and pumpkin. Mix until blended. Stir in the dry ingredients until well-mixed, then add the raisins.

Fill muffin tins and bake for approximately 30 minutes.
