Healthy Apple Bake

99% of the healthy desserts I make are tactics to try and trick my sweet tooth. This one involved baked apples, which always enhances the natural sweetness of the apples, and a couple other ingredients. I also added a little fermented coconut yogurt in my quest to bring more healthy microbes into my diet.

Ingredients

1 cups old-fashioned rolled oats

1/2 cup walnuts

1/2 cup raisins

1 teaspoon baking powder

1 teaspoons cinnamon

1/2 teaspoon salt

2 large eggs

1 cup almond milk

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted, plus more for greasing the dish (or coconut oil)

4 medium sized apples sliced into thin pieces

Instructions

  1. Preheat the oven to 325°F.

  2. In a medium bowl, combine the oats, 1/2 cup of the nuts, baking powder, cinnamon and salt. Mix well. Add in eggs, almond milk and vanilla and mix until well combined. Melt the butter or coconut oil and add to mixture.

  3. In a round 8 inch baking dish, scatter the apples evenly on the bottom and pour the oatmeal mixture over top and spread evenly.

  4. Bake for 40-45 minutes, until the top is golden and the oats are set. Remove and let cool.

  5. Add a dollop of fermented coconut yogurt to the top and enjoy!
