Vegan Cashew Yogurt Recipe - Probiotic Foods
I was at the farmers market the other day and found some cashew yogurt. I am always on the hunt for probiotic foods and this was made locally with only a handful of ingredients vs. the store bought which contain stabilizers and sugar, tons of sugar. The only problem, the farmers market yogurt was $8 for 1 serving! My friend is all about home fermenting and let me borrow her yogurt making machine and then I went wild. And by wild I mean, I made cashew yogurt that was thick, creamy and delicious and only cost $2.10 per serving!!
Yogurt Ingredients
1/2 pound of cashews (about 8 ounces)
1 tbsp honey
1 non-dairy yogurt starter – 1 five gram packet
In a large mason jar add your cashews and fill with water. Put a lid on it and store in the fridge overnight.
Remove cashews from mason jar, discard water and rinse the cashews. Place the cashews in a blender and add 3 cups of water and 1 tbsp of honey. Blend until smooth. Transfer mixture into a small pot and heat until bubbles start to surface. Stir frequently. Once the bubbles become constant, turn off heat and let cool for about an hour.
Add in probiotic packet, stir and transfer to a bowl that will fit inside your yogurt maker. I used this $17 yogurt maker, which essentially just keeps the yogurt at 112 degrees for a long period of time. Once your yogurt is in your yogurt maker, let it sit undisturbed for 10-12 hours. Once the time is reached, place in fridge and you have a probiotic food that you can enjoy throughout the week!
I created a berry compote to top it with that is super easy to make.
Compote recipe
1 bag of frozen berries
1/2 banana
Add ingredients in a small pan and cook over low heat, stirring occasionally until the mixture becomes liquid. This will take about 15 minutes. Use as a topper for your yogurt!
